Cream Wafers
Ingredients
- 1 cup butter
- 1/3 cup whipping cream
- 2 cups flour
- granulated sugar
- 1/2 cup soft butter
- 1 1/2 cups powdered sugar
- 2 tsp vanilla
Directions
- With electric mixer, combine butter and flour. Add cream and continue to mix until a ball begins to form.
- Divide dough into two balls, flatten each slightly and wrap each in waxed paper.
- Chill 1 hour.
- Heat oven to 375 degrees.
- On a lightly floured board, roll one ball of dough to 1/8” thickness.
- Cut into scalloped rounds and transfer to waxed paper heavily sprinkled with granulated sugar, turning to coat both sides.
- Place on ungreased baking sheet and prick in 3 rows with a fork.
- Bake 8 to 10 minutes or until puffy. (Do not allow to brown.)
- Remove immediately from cookie sheet, place on wire rack and allow to cool.
- Repeat with remaining ball of dough.
- Then gather up all scraps of dough and reroll to use all of dough.
- Allow to cool completely. Then put two cooled cookies together with Filling.
- CREAMY BUTTER FILLING: Blend 1/2 cup soft butter with 1 1/2 cups powdered sugar and 2 teaspoons really good vanilla. If desired, tint a delicate pastel color.
