Cream Wafers

Ingredients

  • 1 cup butter
  • 1/3 cup whipping cream
  • 2 cups flour
  • granulated sugar
  • 1/2 cup soft butter
  • 1 1/2 cups powdered sugar
  • 2 tsp vanilla

Directions

  1. With electric mixer, combine butter and flour. Add cream and continue to mix until a ball begins to form.
  2. Divide dough into two balls, flatten each slightly and wrap each in waxed paper.
  3. Chill 1 hour.
  4. Heat oven to 375 degrees.
  5. On a lightly floured board, roll one ball of dough to 1/8” thickness.
  6. Cut into scalloped rounds and transfer to waxed paper heavily sprinkled with granulated sugar, turning to coat both sides.
  7. Place on ungreased baking sheet and prick in 3 rows with a fork.
  8. Bake 8 to 10 minutes or until puffy. (Do not allow to brown.)
  9. Remove immediately from cookie sheet, place on wire rack and allow to cool.
  10. Repeat with remaining ball of dough.
  11. Then gather up all scraps of dough and reroll to use all of dough.
  12. Allow to cool completely. Then put two cooled cookies together with Filling.
  13. CREAMY BUTTER FILLING: Blend 1/2 cup soft butter with 1 1/2 cups powdered sugar and 2 teaspoons really good vanilla. If desired, tint a delicate pastel color.
