Hatch Chile Egg Casserole
Ingredients
- 1/4 cup butter
- 1 16 oz. package cottage cheese
- 8 oz Monterey jack and/or cheddar cheese
- 8 oz canned chiles or 2 hatch chiles diced
- 10 eggs
- 1/4 cup flour
- 1 tsp baking powder
- 1/2 tsp salt
Directions
- Preheat oven to 400 degrees. Set butter in a 6x10-inch casserole dish; place dish in the preheating oven until butter is melted.
- Mix cottage cheese, Jack cheese, green chiles, eggs, flour, baking powder, and salt in a large bowl. Pour mixture into the melted butter in the casserole dish.
- Bake in the preheated oven for 15 minutes. Reduce heat to 350 degrees; bake until middle of casserole is set, about 30 more minutes. Allow to stand for 10 minutes before serving.
- Note: Additional vegetables can be added. We used 1/2 yellow onion, 1 cup corn and 1 yellow squash and it turned out well.
