Parmesan Corn on the Cob

Ingredients

  • 4 ears corn
  • 1/2 cup mayonnaise
  • 1 cup shredded parmesan cheese
  • 1 Tbl chili powder
  • 1 tsp ground black pepper
  • 2 Tbl chopped parsley

Directions

  1. Preheat oven to 400 degrees F.
  2. Place each ear of corn on a sheet of aluminum foil. Alternatively, keep corn husks attached and use in place of foil.
  3. Mix all ingredients (mayonnaise, parmesan cheese, chili powder, ground black pepper, and parsley) together in a bowl until they form a thick paste.
  4. Rub 2 tablespoons of the paste over each ear of corn.
  5. Wrap the aluminum foil around the corn and seal, or fold corn husks around each ear of corn.
  6. Arrange corn on a baking sheet.
  7. Bake in preheated oven for 15 minutes, turn, and continue baking another 15 minutes.
