Shrimp & Spinach Sesame Stirfry

Ingredients

  • 2 tbl toasted sesame oil
  • 1 tbl chili garlic sauce
  • 1 tbl tamari or soy sauce
  • 1 tbl honey
  • 2 tsp cornstarch
  • 2 tsp grated fresh ginger
  • 1 tbl canola oil
  • 1 lb peeled deveined shrimp
  • 1 bunch scalions, cut into 2 inch pieces
  • 1 package baby spinach
  • 2 cups cooked rice
  • 1tbl sesame seeds

Directions

  1. Whisk first 6 ingredients in a small bowl.
  2. Heat canola oil in wok or large skillet over high heat. Add shrimp and scallions, cook 2-3 minutes constantly stirring.
  3. Add spinach, cook 30 seconds.
  4. Add sauce, stirring 1 minute or until sauce thickens.
  5. Serve over rice, with a sprinkle of sesame seeds.

Recipe from April 2020 Cooking Light magazine. Comes together very quickly. Sauce would work on other types of stir-fry.
